Elevate your dinner table with this decadent Citrus-Glazed Cornish Game Hens recipe. This dish uses cornish game hens, which are young chickens that have a wonderful savory flavor like their more mature counterparts. However, they don’t require any carving as each one is a single serving. To infuse with the meaty hens most flavor, we rubbed them with spices, then brushed a savory citrus and mustard glaze infused with rosemary over each one. However, you can make pineapple-peach cornish hens by swapping in peach jam for marmalade and use pineapple juice in place of orange. Alternative, whip up a ginger-apricot glaze by substituting apricot preserves in place of marmalade and add ½ tsp. of ground ginger.
